For the first time ever, Kunwar Rani Kulsum Begum, a descendant of the royal family, showcased recipes with the ITC hotels that have been exclusive to the family for centuries.

The recipes of the delicacies were only revealed to the daughters of the royal family. Kulsum Begum became the first daughter of the family to acquire the top secrets of the Salar Jung kitchen. She passionately protected her recipes. She learned some 300 recipes from her grandmother and took over six years to perfect the art.
Whats the secret?
Salar Jung recipes apart from other cooking styles is their focus on health. While Salar Jung cuisine uses a souring agent in every dish and relies on fresh ingredients. “We use 21 varieties of chilies alone, season-specific souring agents and fresh fruits”, says Kulsum. The food that comes out of the kitchen of Salar Jung III, Nawab Yusuf Ali Khan, has always been shrouded in secrecy.
